The star: CLAI Guanciale
CLAI Guanciale is born from respect for tradition. It is processed with 100% Italian meat, salt, black pepper, red garlic, spices and aromatic herbs, without preservatives.
The slow and delicate curing process, lasting at least eight weeks, allows the product to develop an intense aroma and a compact yet soft texture when sliced.
When pan-fried, it slowly releases its aromatic part, creating a natural, rich and deep cooking base.
It is precisely this characteristic that makes CLAI Guanciale ideal for enhancing traditional Italian first courses.
Ingredients
- Egg tagliatelle
- CLAI Guanciale
- Pumpkin
- Spring onion
- Garlic
- Fresh rosemary
- Parmigiano Reggiano
- Extra virgin olive oil
- Salt
Preparation
The pumpkin is diced and pre-cooked in boiling water, then finished cooking in a pan with an aromatic base of spring onion and rosemary.
The guanciale is browned until golden and fragrant, slowly releasing its natural fat which becomes the base of the sauce.
The egg tagliatelle are tossed in the sauce and creamed until a rich consistency is achieved. The result is a perfect balance of sweetness, savoriness, and Mediterranean aromas.
