A new taste experience
This project was created with the goal of developing a new, distinctive and unique product line.
To do this, we started with our 100% Italian supply chain meat, on which we collaborated with Baldo Baldinini, the aroma expert, the master of essences.

The journey with Baldinini lasted three years.
Many studies, analyses, countless tests of essences and botanicals with our salamis, until the definition of the flavorings that we present on the market.
Flavors composed of a bouquet of essences, crafted from complex blends of botanicals designed to engage the consumer from a gustatory, olfactory, and emotional perspective.
Unique flavors that spark curiosity
We have reinterpreted the concept of seasoning in cured meats.
Highly complex and pure essences, with a significantly strong character, have been brought into the product. We have not “simply” added spices, but have specifically created a tailor-made dough.
The result is a total and pure aroma that you cannot help but perceive in all its depth.
The assortment currently consists of Basil flavoring and Mediterranean Scents. In January, it will be expanded with Alchermes flavoring, while for Easter it will be the turn of Cardamom and Orange Blossom

This new line of flavored salamis fits into the category’s heritage not as an alternative, but as an expansion. It broadens the boundaries with an unprecedented promise: a taste that doesn’t replace but adds a new balance to the traditional salami experience.

CLAI - Baldinini: a union of excellence
Baldo Baldinini: when I met CLAI, I appreciated their desire to create something truly new. I immediately drew from my drawers some projects that had been waiting for the right moment to take shape. I only had to make these ideas consistent with the reality before me. The result is very interesting. I like to think that, every now and then, a truly special product can be born, one capable of leaving a deep mark on the market and representing my Romagna everywhere.
