Salami Fragrances
A new taste experience
This project was born with the aim of creating a new, distinctive and unique product line.
To do this, we started with our 100% Italian meat from supply chain, which we worked on with Baldo Baldinini, the aroma expert and master of essences.
Together with him, we prepared flavourings which, combined with the quality of our meat, offer consumers a new and unprecedented taste experience.
A bouquet of essences for a gustatory and emotional delight.
The journey with Baldinini lasted three years.
It involved extensive research, analysis and countless tests of essences and botanicals with our salamis, until we defined the flavourings that we are now presenting on the market.
Flavourings that consist of a bouquet of essences and complex botanical compositions, crafted to engage consumers on a sensory and emotional level.
Unique flavourings that tickle curiosity
We have interpreted the concept of flavouring in cured meats in a different way.
Very complex and pure essences, with a significantly strong imprint, have been incorporated into the product. We have not ‘simply’ added spices, but have specifically created a bespoke mixture.
The result is a total and pure aroma that cannot go unnoticed in all its depth.
The range currently consists of Basil and Mediterranean Scents flavourings. In January, it will be supplemented with Alkermes flavouring, while Cardamom and Orange Blossom will be added at Easter.
New flavours for every generation
This new line of flavoured salamis is not an alternative to the existing range, but an expansion of it. It broadens the boundaries with a new promise: a taste that does not replace but adds a new balance to the traditional salami experience.
It is a salami that creates an experience, invites exploration and arouses curiosity.
It maintains its link with tradition, but at the same time opens a new chapter of balanced innovation, appealing both to lovers of ‘pure’ salami and to those looking for ‘something’ contemporary and distinctive.
CLAI – Baldinini: a mix of excellence
Baldo Baldinini: When I met CLAI, I appreciated their desire to create something truly new. I immediately drew on some projects that had been sitting in my drawers for some time, waiting for the right opportunity to take shape. I just had to make these ideas consistent with the reality in front of me. The result is very interesting. I like to think that, from time to time, a truly special product can be created, one that can leave a deep mark on the market and represent my Romagna everywhere.
