CLAI's distinctive strength lies precisely in its ability to unite livestock farming and production in a controlled supply chain. The Cooperative oversees the product throughout the entire process, from feed and livestock to processing and marketing. A supply chain controlled "from farm to fork," through the expertise, care, and passion of its people, integrating the value of tradition with the new nutritional needs and lifestyles of the modern consumer.

I get up very early in the morning, like my father before me, to raise the finest Italian pigs: the heavy pig from the Po Valley. It's the tastiest pig there is, in fact, it's part of the PDO (Protected Designation of Origin) production chain for Prosciutto di Parma and San Daniele. Attention to nutrition, animal welfare, and good farming practices have always been our priorities for obtaining the best meat for making excellent salami.

This is where only pigs born and raised in Italy are transformed and processed. And it's here that we begin to identify the best meat for making a fine salami. We were the first in Italy to adopt robotic systems for salami production, maintaining artisanal processes in separate workshops, thus combining technology with manual skill and experience.

Every day I check the quality of our salami, as if my son were going to eat it, because our pursuit of quality, as a guarantee for our customers and end consumers, has allowed our Cooperative to obtain the most prestigious certifications currently available in Italy and Europe. Quality is the driving force behind our business, from field to table, and it is thanks to this that our salamis are also recognized in foreign markets.

We directly farm 380 hectares of land, producing part of the feed for our livestock. A diet of wholesome, natural plant-based products helps our farmers obtain excellent pork for our salami. Our love for the land also translates into the Cooperative's commitment to the environment and sustainability: in 2013, CLAI inaugurated a biogas plant that generates clean energy from the reuse of processing byproducts, a facility from which the Cooperative draws all the energy it needs.

Entering the CLAI Farmer's Butchers is like entering a vibrant, vibrant place, where countless delicious products are ready to be selected and taken home. For us who work here, every moment of the day has its meaning, and every role its indispensability. Indeed, as women, balancing a demanding job with the responsibilities of being a housewife and mother is not easy. But we love working with people. Every day we have the opportunity to interact with our colleagues and a diverse clientele. We do this through our work: some serving behind the counter, some at the register, some in the kitchen. And we do it together, helping each other. We are convinced that "being a woman" brings added value to our Cooperative, where our feminine nature perfectly manages the values ​​of trust and empathy in customer relationships: from the young bride who asks for advice on the best cut of meat for a braised dish, to those looking for a good wine to pair with their charcuterie and cheese platter. It's precisely people who give value to our work and who, in the morning, when we enter the butcher's shop, make us say: today will be another new experience.
