Rosso Antico Faggiola Red Cheese is a unique specialty cheese, born from the union of dairy tradition and Romagna wine culture. Made with 100% mountain milk, it is aged briefly and then refined in Tre Monti Sangiovese wine, which enhances its aroma and flavor.

 What Makes It Unique 

  • Aged in Sangiovese wine from Cantine Tre Monti: after 12-15 days of aging, the cheese is immersed for about 2 weeks in the wine, which penetrates the paste, enriching it with intense aromas.

Rosso Antico Faggiola Red Cheese represents the meeting of artisanal dairy mastery and Romagna's winemaking excellence. Its base is a young caciotta, made with 100 percent mountain milk from the pristine pastures of the Tuscan-Romagna Apennines. After a short aging period of 12-15 days, the cheese is immersed in Sangiovese wine from the Tre Monti winery, a local winemaking excellence. This particular aging technique allows the wine to slowly penetrate the cheese paste, giving intense aromas, an unmistakable color and an aromatic and persistent taste. The result is a unique product that tells of the territory in which it was born and the virtuous union between two arts: that of wine and that of cheese. Faggiola cheeses are still made by hand one by one by Master Cheesemakers, respecting the rural tradition and with attention to certified quality. An ideal choice for those who Search authentic, distinctive flavors deeply connected to Romagna. Not suitable for people who are lactose intolerant and allergic to milk proteins.
