Despite its small size, this salami is matured for at least eight weeks in dedicated rooms, resulting in a sweet and delicate salami. "Imola 1962" was created thanks to over two years of research coordinated by the Reggio Emilia CRPA (Animal Production Research Center) in collaboration with the CIRI (Interdepartmental Center for Agri-food Industrial Research) of the University of Bologna. Storage tips
