Pancetta and cured meats are the heart of dishes that have become symbols of Italian cuisine: carbonara, amatriciana, gricia. But every recipe is made of two halves, and the other is pasta. That is why alongside our cured meats we have chosen an Italian organic durum wheat pasta.
Girolomoni Senatore Cappelli Maccheroni are organic Cappelli durum wheat pasta, one of the oldest varieties of durum wheat grown in Italy. Rough-cut surface, slow drying and 12 minutes of cooking.
Distinctiveness of Senatore Cappelli maccheroni
-
A single wheat, in its purest form: organic Senatore Cappelli durum wheat semolina, selected in the early twentieth century and the ancestor of most durum wheats grown in Italy today.
-
Rough-cut surface: the rough and porous surface holds sauces and condiments better.
-
Slow drying: the pasta is dried slowly and cooks in 12 minutes.
-
100% Italian, organic wheat: produced by Girolomoni in Montebello, in the Marche region, since 1971.
Why CLAI and Girolomoni
The collaboration was born from the CLAI "100% Italian" Award, which we presented to Gino Girolomoni in 2017, recognized as a pioneer of organic farming in Italy and a bearer of the values of farming culture. We share the cooperative model and the choice of 100% Italian raw materials: wheat for Girolomoni, pork for CLAI.
