In this preparation, the star is our CLAI Cured Sausage, a cured sausage made with 100% Italian meat from an integrated and controlled supply chain. A sweet, tender, and easy-to-peel sausage, ideal for enjoying on its own or as a central ingredient in cooking.

The piadina is prepared in a pan, without yeast, to obtain a soft and rollable base. Inside, sautéed asparagus, fresh tomatoes, and homemade mayonnaise create a balance of textures and flavors that enhance the CLAI Passita.   • Spelt flour
  • Extra virgin olive oil
  • Salt

  • Asparagus
  • Spring onion
  • Fresh tomatoes
  • Egg yolks
  • Parmigiano Reggiano
  • Seed oil
  • Lemon juice
  • Pepper

Preparation

Prepare the piadina dough by combining flours, extra virgin olive oil, water, and the other ingredients until a smooth and elastic mixture is obtained. After a short rest, roll it out thinly and cook it in a pan to obtain a soft and flexible piadina.

Meanwhile, sauté the asparagus with the spring onion and make a homemade mayonnaise with egg yolks, seed oil, lemon, and Parmesan, until a smooth and velvety cream is obtained. The CLAI Cured Sausage is thinly sliced to enhance its aroma and delicacy.

Fill the piadina with mayonnaise, asparagus, fresh tomatoes, and slices of Passita, then roll it carefully. The result is a soft, fresh, and flavorful rolled piadina, ideal as an Italian aperitif or a light single dish.
