Although modest in size, this salami undergoes a long maturation of at least 8 weeks in dedicated cellars, resulting in a sweet and delicate flavor. Its short ingredient list highlights the premium quality of 100% Italian pork from the CLAI supply chain. "Imola 1962" was developed through a rigorous two-year research project coordinated by the CRPA of Reggio Emilia (Animal Production Research Center) in collaboration with the CIRI (Interdepartmental Industrial Research Center for Agri-food) at the University of Bologna.
