After being trimmed and salted with pepper and herbs, it is rolled, tied and left to mature for about three months. When cut, it has a beautiful bright red color, soft and fragrant, ideal for slicing thinly or for use in cooking.

Information

CLAI 's Pancetta Arrotolata comes from the belly of the pig, a cut characterized by the natural alternation of lean and fatty parts that give flavor and tenderness. After trimming, which gives it its cylindrical shape, the meat is processed with salt, pepper and herbs and left to rest in salting for a short period. This is followed by rolling, hand tying and a slow curing process of about three months, during which the pancetta develops all its character. When cut, it has a beautiful bright red color, a spicy and inviting aroma, and a soft texture that lends itself to a variety of uses. It is enjoyed thinly sliced as an appetizer or in a hot sandwich, but it also finds ample room in the kitchen: in first courses, to flavor vegetables, legumes, meats or savory pies. Made from pork born, raised and slaughtered in Italy, our Pancetta Arrotolata is gluten-free, lactose-free, milk protein-free, with no added polyphosphates and no glutamates. A tasty and versatile choice that combines quality and convenience.
