Fossa "Reale" Faggiola aged Tuscan cheese is produced at the Faggiola factory in Palazzolo sul Senio.

Made from 100% mountain cow's milk, it is aged for five months on wooden boards, after which it is taken to Sogliano al Rubicone where it remains in the famous tufa pits. 

Fermentation takes place in these pits, which after an additional three months returns a flavorful, straw-colored cheese with a firm, uniform texture. Vacuum-packed.

Please note: the black dots present on the product, are absolutely natural and are the result of aging inside the pits.

Information

Faggiola "Reale" Fossa Cheese is produced at the Faggiola factory in sul Senio. Made from 100% mountain Faggiola cow's milk, it is aged for five months after which it is taken to Sogliano al Rubicone in the famous tufa caves. Fermentation takes place in these pits, which after three months returns a flavorful, straw-colored cheese with a firm, uniform texture. Aging in the pits gives the cheese unique flavors and aromas. This practice dates back as far as the Middle Ages, where storing food in pits was a priority. By the end of the 13th century, the practice of digging cheese in public pits dug into sandstone rock was already famous in Sogliano al Rubicone. In the spring and summer periods, there was a large production of cheese, and it was necessary to preserve it for the long, cold winters. Dimpling ensured that for three months the cheese would remain soft, and once extracted it would keep until spring of the following year, as well as acquire a unique flavor. These rituals are still observed today, with the typical dimpling during the months of August and the related retrieval of the cheeses in November. Fossa aged Tuscan cheese "Reale" is vacuum-packed. Not suitable for people who are lactose intolerant and allergic to milk proteins.
